2 | cups | Okra,thinly sliced,rinsed |
3 | Bacon slices,diced | |
1 | cup | Green bell pepper,chopped |
1 | cup | Onions,chopped |
1 | cup | Rice,uncooked |
2 | cups | Chicken broth |
2 | teaspoons | Salt |
1 | can | Tomatoes,drain/chop(16oz) |
Directions
1. In large skillet, saute okra and bacon until lightly browned. 2. Add bell peppers and onions; continue cooking until vegetables are crisp-tender.
3. Add rice, chicken broth and salt. 4. Bring to a boil, stir once, cover, reduce heat and simmer 15 minutes, or until rice is tender and liquid is absorbed. 5. Add tomatoes; heat, and fluff with a fork.
