Old fashioned vegetable beef soup

Ingredients

Quantity Ingredient
3 Beef shanks; cross cut
8 cups Water
4 teaspoons Salt
½ teaspoon Oregano; dried
¼ teaspoon Marjoram; dried
5 eaches Whole black peppercorns
2 eaches Bay leaves
2 celery; chopped

Directions

STOCK

~--------------------------------Vegetables------------ 1 10 oz. corn; frozen

3 ea tomatoes; peeled and cut up 2 ea potatoes; medium, cubed

1 c green beans, fresh; or

: -frozen

2 ea carrots; cubed

1 ea onion; medium, sliced

Combine all stock ingredients and bring to a boil. Cover, reduce heat to low, and simmer for 2 hours. Remove beef; when cool enough to handle, cut off meat and coarsley chop. Discard bones, strain broth, and skim excess fat. Return broth to kettle and add all remaining ingredients plus chopped meat. Bring back to a boil, cover, reduce heat to low, and simmer for an hour longer.
