Old-fashioned potato pancakes

¾ | cup | Pancake mix |
¾ | teaspoon | Salt |
1 | cup | Milk |
1 | Egg; beaten | |
3 | tablespoons | Melted butter |
2 | cups | Grated; peeled potatoes |
¼ | cup | Finely chopped onion |
Directions
Place pancake mix and salt in a large bowl. Add milk, egg and butter. Stir until batter is fairly smooth. Stir in potatoes and onions. For each pancake, pour about ¼ cup batter on a lightly greased hot griddle. Bake to a golden brown, about 4 minutes for each side. Turn only once. >From Patricia Bollinger, Marble Hill, Mo.
