Old-fashioned prune whip

2 | teaspoons | Lemon juice |
1 | dash | Salt |
1 | teaspoon | Lemon zest |
4 | tablespoons | Powdered sugar |
4 | Egg whites |
Directions
Pit prunes and mash. Blend in lemon peel and lemon juice, 2 tablespoons sugar and salt. To stiffly beaten egg whites, add remaining sugar, beating until mixed well. Fold in prune mixture gently. Pile lightly into 1-½ quart baking dish. Bake at 350 degrees for 20-30 minutes or until knife inserted in center comes out clean. Serve warm with custard sauce if desired.
