One-pan potatoes and pork provencale

Ingredients

Quantity Ingredient
4 eaches Medium potatoes, cut 3/4-inch cubes
Microwaved 6-10 minutes until tender
1 tablespoon Vegetable oil
1 pounds Lean pork, cut into thin strips
1 cup Cherry tomatoes
cup Orange marmalade
2 tablespoons Dij

Directions

While potatoes cook, heat oil in large skillet over high heat. Add pork and toss until opaque. Drain. Add potatoes and tomatoes; saute and toss 3 minutes.
