Opossum sausage

Ingredients

Quantity Ingredient
5 Feet medium hog casings
4 pounds Opossum, trimmed of all fat cubed
1 pounds Pork fat, cubed
2 teaspoons Salt
2 teaspoons White pepper
1 teaspoon Tabasco sauce
1 teaspoon Crushed cumin
1 teaspoon Oregano
2 teaspoons Sweet paprika

Directions

Prepare casings. Mix remaining ingredients, grind using the coarse disk and stuff into casings. Twist off into 3-4" links. Cook by sauteing inoil until well browned.
