Ingredients

5Feet medium hog casings
5poundsMoose with fat OR_
4poundsMoose meat and an equal amount of beef fat, cubed
2teaspoonsSalt
2teaspoonsCoarse grind black pepper
2clovesFinely minced garlic
¼cupOnion, finely minced
½cupSweet red pepper, minced
1teaspoonCrushed red pepper

Directions

Prepare casings. Combine remaining ingredients, grind through the coarse disk and stuff into casings. Twist off into 4" links. Let cure in the refrigerator two days before cooking.
