Orange and pear salad

Ingredients

Quantity Ingredient
4 Navel oranges, peeled, cored
And diced
2 Ripe pears, cored anddiced
12 cups Minced green onion
14 cups Julienned fresh basil
½ Julienned fresh mint
1 bunch Fresh watercress, arugula or
Spinach leaves
Sweet Sesame Orange Dressing
(recipe follows)

Directions

Toss salad ingredients with dressing. Makes 6 side-dish servings.

STREET SESAME ORANGE DRESSING: Whisk together sesame oil, 2 tablespoons minced shallot, 1 teaspoon minced garlic, 2 tablespoons orange marmalade, 1 tablespoon cider vinegar, ½ teaspoon salt and ½ teaspoon black pepper.

Whisk in 2 tablespoons hot water and set aside to combine flavors. Makes ½ cup.
