Orange cheese dome with fresh fruit

Ingredients

360 grams Low-fat cottage cheese; drained
150 millilitres Reduced-fat whipping cream
3 teaspoons Icing sugar
3 Oranges
4 Kiwi fruit; peeled and sliced
2 Bananas; sliced on a slant,
; tossed in a little
; lemon juice
1 large Ripe mango; peeled and cut into
; strips
3 Ripe passion fruit; halved and pulp
; scooped out

Directions

Grate the zest from 2 of the oranges and set aside. Using a wooden spoon, push the cottage cheese through a sieve into a small bowl (this takes just seconds). Whip the cream until stiff peaks form. In a mixing bowl gently fold the sieved cheese and cream together and stir in the icing sugar and orange zest.

Pile the cream mixture into the centre of a large platter and, using a spatula, shape into a dome. Chill well.

Meanwhile prepare the fruit. Using a sharp knife, peel and slice the oranges. Arrange the fruit attractively around the cream. Spoon the passion fruit pulp over the top of the cream and serve.
