Orange cheese dome with fresh fruit

360 | grams | Low-fat cottage cheese; drained |
150 | millilitres | Reduced-fat whipping cream |
3 | teaspoons | Icing sugar |
3 | Oranges | |
4 | Kiwi fruit; peeled and sliced | |
2 | Bananas; sliced on a slant, | |
; tossed in a little | ||
; lemon juice | ||
1 | large | Ripe mango; peeled and cut into |
; strips | ||
3 | Ripe passion fruit; halved and pulp | |
; scooped out |
Directions
Grate the zest from 2 of the oranges and set aside. Using a wooden spoon, push the cottage cheese through a sieve into a small bowl (this takes just seconds). Whip the cream until stiff peaks form. In a mixing bowl gently fold the sieved cheese and cream together and stir in the icing sugar and orange zest.
Pile the cream mixture into the centre of a large platter and, using a spatula, shape into a dome. Chill well.
Meanwhile prepare the fruit. Using a sharp knife, peel and slice the oranges. Arrange the fruit attractively around the cream. Spoon the passion fruit pulp over the top of the cream and serve.
