Lime-orange salsa

4 Navel oranges, peeled and
White pith removed
1 small Red onion, finely chopped
1 cup Fresh lime juice
1 cup Chopped fresh cilantro
1 tablespoon Minced chipotle peppers
1 Glove garlic, minced
Salt & Pepper to taste

Directions

Working over a medium bowl to catch the juice, cut the orange segments from the surrounding membrane, letting the segments fall into the bowl. Add onions, lime juice, cilantro, chipotle peppers, and garlic. Stir to combine; season to taste w/S&P. (Can be prepared ahead and stored, covered, in the frig for up to 8 hours.) File
