Oven barbecued chicken quarters

2 | tablespoons | Firmly packed brown sugar |
2 | tablespoons | Spicy brown mustard |
1 | teaspoon | Liquid red pepper seasoning |
4 | Whole broiler-fryer legs (thigh and drumstick) | |
Skin removed (about 2 pounds) |
Directions
In a large bowl, combine chili sauce, brown sugar, mustard, and red pepper seasoning. Add chicken; turn to coat well, cover. Chill 1 hour, turning occasionally. Preheat oven to 350 F. Line a jelly-roll pan with foil. Place chicken in pan; reserve sauce. Bake 1 hour, basting several times with sauce, or until chicken is tender.
Makes 4 servings.
