Oven roasted chili salmon on spinach-onion fondue

Ingredients

Quantity Ingredient
2 larges Red onions; sliced
2 cups Spinach; sliced
4 larges Banana leaves; parchment paper and/or aluminum foil
3 cups Cooked jasmine rice
8 3-ounce pieces of salmon fillet, sliced on the bias
Chili paste; recipe to follow
1 bunch Scallions; chopped

Directions

Preheat the oven to 350 degrees. In a large saute pan, cook the onions until caramelized. Remove the pan from the heat and add the spinach. Taste for seasoning. Lay a banana leaf out and fold in half. Place a small mound of rice on the leaf and top with the vegetable mixture. Place a serving of salmon on top of vegetables and smother the paste over the salmon. Bake for 20 minutes. Garnish with the chopped scallions.

Yield: 4 servings
