Oven roasted chili salmon on spinach-onion fondue

Ingredients

2 | larges | Red onions; sliced |
2 | cups | Spinach; sliced |
4 | larges | Banana leaves; parchment paper and/or aluminum foil |
3 | cups | Cooked jasmine rice |
8 | 3-ounce pieces of salmon fillet, sliced on the bias | |
Chili paste; recipe to follow | ||
1 | bunch | Scallions; chopped |
Directions
Preheat the oven to 350 degrees. In a large saute pan, cook the onions until caramelized. Remove the pan from the heat and add the spinach. Taste for seasoning. Lay a banana leaf out and fold in half. Place a small mound of rice on the leaf and top with the vegetable mixture. Place a serving of salmon on top of vegetables and smother the paste over the salmon. Bake for 20 minutes. Garnish with the chopped scallions.
