Overnight macaroons

Ingredients
Quantity | Ingredient | |

4 | cups | Quick-cooking oatmeal |
2 | cups | Brown sugar |
1 | cup | Vegetable oil |
2 | Beaten eggs | |
1 | teaspoon | Salt |
1 | teaspoon | Almond extract |
Directions
The night before, mix together oatmeal, sugar and oil. Next morning, mix in remaining ingredients.
Drop them from a teaspoon onto a greased baking sheet, bake at 325 F for 15 minutes, and remove them promptly when they are done.
**These will seem a little crumbly at first, but will set after they cool.
Here is a new cookie I tried over Christmas and it was the favorite of the family. It comes from the I Hate to CookBook by Peg Bracken.
