Oyster stuffed fillets of sole

Ingredients

Quantity Ingredient
2 Strips bacon
1 small Minced onion
1 can (8oz) oysters
2 cups Soft bread crumbs
2 tablespoons Fresh lemon juice
1 tablespoon Sake
1 Egg
2 tablespoons Minced parsley
½ teaspoon Salt
1 pinch Pepper
6 Fillets of sole (2 lb)
OYSTER SAUCE

Directions

Fry bacon & onion until tender. Drain & chop oysters, reserving ¼ cup liquid for sauce; combine oysters with remaining ingredients except fillets. Separate mixture into 6 parts: place each part on a fillet & roll up tightly. Fasten ends with toothpicks. Place rolled fish in buttered baking dish; cover & bake in 375 oven for 45 minutes.
