2 Garlic cloves; peeled
½ teaspoon Maldon salt
15 grams Fresh flat-leaf parsley; stalks discarded
4 tablespoons Freshly grated Parmesan
4 tablespoons Extra virgin olive oil
½ Lemon; squeeze of
Maldon salt and freshly ground black
; pepper

Directions

Place the garlic, salt, parsley and Parmesan in a mini blender and whizz to a puree. Add the olive oil and lemon juice and blend again briefly. Season to taste, cover tightly and chill until ready to serve.
