Parsley & potato soup

Ingredients

Quantity Ingredient
1 medium Onion, chopped
1 teaspoon Olive oil
2 cups Chopped potatoes
1 cup Sliced leeks, white only
4 cups Stock
1 teaspoon Salt
¼ teaspoon White pepper
2 tablespoons Chopped fresh chives
¼ cup Chopped fresh parsley

Directions

In a large pot, combine all the ingredients except the salt, pepper, chives & parsley. Cover the pot & bring to a boil. Lower heat & simmer for 30 minutes. Cool slightly, then puree. Season with salt & pepper & garnish with chives & parsley.
