Pasta dressed with tomato/basil sauce

¾ | pounds | Angel hair pasta |
½ | cup | Extra-virgin Olive Oil |
6.00 | clove | Garlic, minced |
6.00 | large | Tomatoes, diced |
2.00 | tablespoon | Basil, chopped, fresh |
½ | cup | Parmesan cheese, grated |
Directions
Cook the pasta according to package directions (or better yet, make fresh, and cook) to al dente. Drain. Add 1 T. of the olive oil and mix gently to coat. Meanwhile, saute half the garlic in a large skillet using 2 tablespoons of the olive oil. Cook over medium heat for about one minute, then add diced tomatoes and the basil. Bring to a boil, reduce heat, and simmer for about 40 minutes or until the sauce begins to thicken.
In a separate pan, saute the remaining garlic in the remaining olive oil. Cook for about one minute. Add the pasta and toss over medium high heat until heated through. Sprinkle with cheese and toss to blend. Serve immediately, topped with tomato sauce.
