Pea soup with coriander

1 | Onion; finely chopped | |
1 | Clove garlic; finely chopped | |
1 | teaspoon | Ground coriander |
1 | Vegetable stock cube | |
600 | millilitres | Water; (1 pint) |
400 | grams | Frozen peas; (13oz) |
Salt and freshly ground black pepper | ||
1 | 142 ml carto single cream | |
2 | tablespoons | Fresh coriander; finely chopped |
Directions
Heat the oil, cook onion and garlic until soft. Add the ground coriander and cook for 1 minute.
Dissolve the stock cube in 600ml (1pint) boiling water and add to the pan with the peas and cook gently for 15 minutes.
Liquidise until a smooth puree. Season.
Stir in single cream and fresh coriander just before serving.
