Pear ginger preserves

Ingredients

Quantity Ingredient
4 cups Pears -- peeled and
Coarsely
cup Honey
¼ teaspoon Salt
1 Lemon -- finely diced
Ginger root

Directions

Combine all ingredients except ginger root. Cook for about 15 minutes, stirring occasionally, until the mixture is of spreading consistency. Spoon hot mixture into hot sterilized jars to within ½-inch from top. Add a small piece of ginger to each jar. Seal and process in a boiling water bath for 5 minutes.
