Pecan delight

Ingredients

Quantity Ingredient
3 eaches Egg whites
20 eaches Round buttery crackers; roll
1 cup Sugar; fine
¼ teaspoon Baking powder
1 cup Finely chopped pecans
1 teaspoon Vanilla extract
1 x Whipped cream

Directions

Grease 9" glass piepan. Beat egg whites til stiff; fold in sugar, baking powder, and vanilla extract.

Beat until stiff. Fold in cracker crumbs & chopped pecans. Pour mix into piepan. Bake at 350 degrees for 20 mins. Top with==>> whipped cream. Yield: 6-8 servings.
