Pep-it-up pepper sandwich

Ingredients

½ cup Sour cream
2 Scallions; sliced with tops
2 teaspoons Grainy Dijon mustard
1 teaspoon Prepared horseradish
1 can Spam Less-Sodium luncheon meat - (12 oz); sliced 4 pieces
4 Kaiser rolls; split, toasted
1 cup Peloponnese roasted sweet red peppers; sliced
1 Green bell pepper; cut into rings
1 cup Banana peppers; sliced

Directions

In small bowl, combine sour cream, scallions, mustard, and horseradish; set aside. In large skillet over medium-high heat, lightly brown Spam slices on both sides.

Spread 1 tablespoon of sour cream mixture on each of four roll halves. Top with Spam, peppers, and remaining sour cream mixture. Place tops of rolls on sandwiches and serve.
