Picquant black bean & red tomato salsa

Ingredients

Quantity Ingredient
2 Tomatoes -- diced
1 Green bell pepper -- seeded
& diced
1 medium Onion -- diced
3 Cloves garlic -- minced
2 Jalapeno peppers -- seeded &
Minced
1 tablespoon Cilantro -- minced
2 teaspoons Lime juice
teaspoon Ground cumin
1 teaspoon Dried oregano
¼ teaspoon Black pepper
¼ teaspoon Salt
teaspoon Cayenne pepper
2 cups Canned crushed tomatoes
1 cup Black beans -- drained

Directions

Combine all ingredients except crushed tomatoes and black beans in large bowl and blend well. Place ¾ of the mixture in food processor and process for 5 seconds, creating a vegetable mash.

Return the mash to the bowl, add the crushed tomatoes and beans and blend again. Cover the bowl tightly and chill for at least 1 hour, allowing the flavors to meld together.
