Pineapple steak kabobs^

1 | tablespoon | Sherry |
1 | clove | Garlic, crushed |
1 | tablespoon | Apple juice concentrate |
KABOBS: | ||
1 | pounds | Lean flank steak, cut in |
2 | \"cubes | |
½ | Red bell pepper, cut in 1\" | |
Chunks | ||
1 | can | (8oz) pineapple chunks, |
Unsweetened, juice reserved | ||
8 | mediums | Mushrooms |
Directions
Marinate steak in combined marinade ingredients 1-2 hours or more, turning occasionally. Thread steak, peppers, pineapple and mushrooms on skewers. Grill on preheated grill about 10 minutes or until desired doneness, basting with marinade. Serve on rice.
Variation: Substitute hot salsa for the marinade.
