Plantains; green
Salt
Oil, vegetable; for frying

Directions

Peel the plantains and slice crosswise as thinly as possible. Drop into salted ice water and let stand for 30 minutes. Drain and dry on paper towels. Fry until delicately browned in deep oil at 370F. Drain on paper towels, sprinkle with salt and serve as an accompaniment to drinks.
