Poached eggs on ranch-style potatoes

Ingredients

Quantity Ingredient
20 ounces Pkg frozen potatoes
1 tablespoon Veg oil
1 clove Garlic, minced
2 tablespoons Finely chopped green chilies
8 ounces Can tomato sauce
¼ teaspoon Chili powder
¼ teaspoon Oregano
8 Eggs, poached

Directions

Cook potatoes according to pkg directions. Meanwhile, heat oil and saute garlic and chilies just until garlic begins to turn color. Add tomato sauce, chili powder and oregano. Bring to a boil, lower heat and simmer 5 mins. Divide potatoes among warm plates and place 2 poached eggs on top. Spoon several tbsp of sauce over eggs and potatoes without covering completely; some sauce should be on side of plate. Serve immediately. Submitted By CAROL VERGE On 04-13-95
