Polynesian beets

Ingredients

1 | can | (16oz) sliced beets or fresh beets (add a little water to fresh beets for the juice) |
1 | can | (16oz) pineapple chunks |
1 | Or 2 tbsp. corn starch | |
⅓ | cup | Sugar |
1 | tablespoon | Vinegar |
Salt and pepper to taste | ||
3 | tablespoons | Margarine |
Directions
Drain beets or cook fresh ones and slice.drain pineapple, reserve juices.
Combine beet juice and pineapple juice in saucepan; cook over medium heat to boiling.Mix cornstarch,sugar, vinegar,salt and pepper into a sooth paste.Cook,stirring constantly, until thickened. Add beets and pineapple; Mix. Add margarine; simmer for 20 minutes.Serve hot or cold. Yield: 8-10 servings Enjoy!!
