Pork loin with potato and cabbage

1 can Stewed tomatoes low-sodium or reg w/juice; 14 1/2 oz can
3 cups Cabbage, coarse ribs removed thinly sliced
1 large Onion; finely chopped
2 Garlic cloves; minced
1 tablespoon Light brown sugar; packed
2 teaspoons Balsamic vinegar
2 teaspoons Dried thyme
1 large Bay leaf
¼ teaspoon Salt, or to taste; optional
¼ teaspoon Black pepper
½ pounds Pork loin, trimmed of all fa sliced
1 can Tomato sauce, low-sodium or regular; divided

Recipe by: Skinny One-Pot Meals - ISBN 0-940625-75-X In large crock pot, combine potatoes, tomatoes, cabbage, onion, garlic, brown sugar, vinegar, thyme, bay leaf, salt, if desired, and pepper. Stir to mix well. Add pork slices on top of vegetables. Pour one-half of tomato sauce over all. Reserve remaining tomato sauce in non-reactive container in refrigerator.

Cover pork mixture, can cook on high setting 1 hour. Stir. Reduce heat to low, and cook an additional 5 to 6 hours. Stir in remaining tomato sauce and cook an additional 5 to 10 mins.
