Pork w/ apples and noodles

2 | teaspoons | Olive oil |
1 | cup | Onion; chopped |
2 | cloves | Garlic; minced |
½ | teaspoon | Paprika |
½ | cup | Beef broth; low sodium |
1 | teaspoon | Cornstarch |
2 | smalls | Granny Smith apples; cored |
. and coarsely chopped | ||
¼ | teaspoon | Salt |
pinch | Ground red pepper | |
1 | medium | Tomato; cut into wedges |
4 | cups | Egg noodles; cooked |
Parmesan cheese & parsley | ||
. for garnish if desired |
Directions
1. Place the pork strips on a rack over a tray. With a vented cover, microwave on HIGH for 1 minute; set aside.
2. In medium casserole, microwave oil on High 1 minute. Add pork, onion, garlic and paprika. With vented cover, microwave on Medium 5 minutes, stirring twice.
3. In 1-cup measure, stir broth and cornstarch until dissolved. Add to casserole with apples, salt and red pepper. Cover and microwave on High 4 minutes, stir and add tomato. Cover and microwave on High 3 minutes longer, or until apples are tender. Let stand, covered, 5 minutes.
4. To serve, place noodles on serving plate. Top with pork mixture; toss to combine. Garnish with parsley, if using.
