Pork with apple-nutmeg sauce

Ingredients

4 | pounds | Pork roast |
2 | cups | Apple, chopped |
½ | cup | Onion, finely chopped |
1 | small | Garlic clove, minced |
1 | tablespoon | Margarine |
1 | tablespoon | Cornstarch |
1 | teaspoon | Chicken bouillon granules |
¼ | teaspoon | Nutmeg |
⅛ | teaspoon | White pepper |
1¼ | cup | Apple juice |
Directions
Trim fat off roast. If desired, sprinkle salt and pepper on roast. Place roast, rib side down, in a shallow baking dish. Insert a thermometer.
Roast in a 325 deg f oven for 1½ to 3 hours or until thermometer reaches 170 deg f for well done. Cover with foil for 15 minutes before carving.
For the sauce: in a small saucepan, cook apple, onion and garlic in margarine until tender. Stir in cornstarch, bouillon, nutmeg and pepper.
Add apple juice all at once. Cook and stir until bubbly. Cook and stir one minute more. To serve, slice between ribs and pass the sauce. Serves 8 to 10 people.
