6 mediums Potatoes
2 tablespoons Butter
¼ pounds Lean bacon
2 tablespoons Flour
1 cup Stock or water
Salt and pepper to taste
Bouquet garni

Directions

Wash, peel and cube the potatoes. Melt butter in a heavy saucepan.

Dice the bacon and fry lightly in the butter till golden brown. Stir in flour, and when it begins to darken, add stock, bouquet garni and then potatoes. cover and simmer for 25 to 30 minutes.
