Provincale-style pasta sauce

1 | tablespoon | Olive oil |
¼ | cup | Chopped fresh parsley |
8 | Olives, kalamata, italian | |
2 | teaspoons | Fresh thyme or 1/2 tsp dried |
2 | Cloves garlic, minced | |
1 | teaspoon | Capers, drained |
Directions
Combine all ingredients in a large bowl. Season to taste with salt and pepper. Makes about 3 cups. Serve with penne, zita or other tubular pasta.
Recipe makes enough sauce for about 8 oz. pasta (dry weight). For good eating sprinkle with grated parmesan cheese before serving.
