Chopped hot pepper -- to

Chopped onion -- to taste
Chopped garlic -- to taste
Red pepper flakes -- to
Taste
Salt -- to taste
1 Boned leg of pork -- cut
Into bite-size p

Directions

COMBINE ALL THE INGREDIENTS except the pork in a non-reactive pan.

Add the pork and marinate for 4 days, turning frequently. Keep covered in the refrigerator. Take out and wipe dry. Cook pork on a grid over burning coals to get a smokey flavor.
