Quinoa olive medley

Ingredients

2 cups Eden Quinoa; rinsed
cup Black olives; cut in half
cup Green olives; cut in half
¼ cup Pine nuts; lightly roasted
1 bunch Green onions; finely chopped
¼ cup Parsley; finely chopped
½ small Red pepper cut into thin strips
2 Garlic cloves; finely minced
2 tablespoons Eden Extra Virgin Olive Oil to...
4 tablespoons Eden Ume Plum Vinegar

Directions

Cook Quinoa according to package directions. Cool, then mix in remaining ingredients, adding Ume Vinegar last and seasoning to taste. Delicious as a salad or side dish.
