1½ | each | To 2 cup rye bread crumbs |
1 | each | Lightly beaten egg |
1 | tablespoon | Worcestershire sauce |
½ | cup | Chopped onion |
2 | tablespoons | Sweet pickle relish |
¼ | cup | Thousand island dressing |
½ | teaspoon | Fresh ground pepper |
¾ | cup | Sauerkraut very well drained |
1 | cup | Shredded swiss cheese plus some for garnish |
Directions
Combine beef, bread crumbs, egg, worcestershire, onion, pickle relish, salad dressing and pepper. Place on a sheet of wax paper and shape into a flat 6 x 14 inch rectangle. Leaving a ½ inch border on all sides, sprinkle meat with sauerkraut and swiss cheese. Staring at a short end, roll up, jelly roll fashion - using the paper to help guide the mixture. Place roll in a shallow roasting pan and bake, uncovered, for 45 minutes in a preheated 350 degree oven. Top with additional swiss cheese before serving.
