Rice lasagena - butter busters^

Ingredients

Quantity Ingredient
3 cups Cooked rice
½ cup Egg Beaters
¼ cup Fatfree Parmesan cheese (Alpine Lace or Weight Watchers)
2 cups Nonfat mozzarella cheese, grated
½ cup Nonfat cottage or ricotta cheese
1 pounds Ground white meat skinless turkey
1 can (26 3/4oz) hunt's light spaghetti sauce
1 can (8oz) mushrooms stems & pieces, rinsed and drained
1 cup Fatfree mozzarella cheese, grated

Directions

Mix rice, Egg Beaters and Parmesan cheese; set aside. Preheat oven to 375F. Combine cheeses, reserving 2 tablespoons Parmesan. Mix well.

Brown meat in microwave 4-5 minutes covered with waxed paper in a small bowl. Drain off any visible fat. Add spaghetti sauce and mushrooms. heat mixture in the microwave for 1 minute. Spoon half of the rice mixture into a 9" casserole that has been sprayed with Pam.
