SERVES 4 AS A SIDE DISH
This is a very nice side dish, though the name that Officer Bill Galvin, from Philadelphia, has given it is somewhat misleading. Maybe it is because he is a fireman! You don't want to burn the almonds. They simply need to be toasted until golden. That makes for wonderful flavor! The restaurants in Philadelphia are just wonderful, but it looks like the firefighters eat very well at the firehouses. Very well indeed.
Saut the almonds in the butter until they are golden. Stir into the rice and taste for salt.
