Rice malgache

Ingredients

Quantity Ingredient
2 tablespoons Butter
2 tablespoons Chopped scallion
1 Green pepper, coarsely chopped
1 cup Carolina rice
1 teaspoon Salt
1 pinch Saffron
1 cup Consomme
2 cups Boiling water

Directions

1) In a large saucepan, heat butter. Add scallion and Pepper Cook until

browned. Add rice and cook, stirring Constantly, until rice is well coated with butter. 2) Add salt, saffron, consomme, and water.

Bring to a Boil Cover and simmer for 15 minutes, or until rice Has absorbed all the liquid. Serve hot.
