Rice pudding brulee

Ingredients

Quantity Ingredient
100 grams Pudding rice
50 grams Sugar
2 tablespoons Custard powder
1 Lemon; zest of
1 litre Sweetened soya milk
Icing sugar

Directions

Place all the ingredients except the icing sugar in a cast iron saucepan and place on a very low heat for 1½ hours. Stir every 15 minutes.

Put the cooked rice mixture into ramekins and cover with icing sugar. Place the ramekins under the grill or use a blow torch to caramelise the sugar.

Serve immediately.
