Almond holiday rice

1 | cup | Mahatma (r) Rice |
1 | medium | Onion, chopped |
1 | Garlic clove, minced | |
4 | teaspoons | Bbutter, divided |
½ | cup | Chopped almonds, toasted |
1 | can | Chopped pimientos (1 oz) |
2 | cans | Mushrooms, drained and chopped (2.5 oz) |
Salt to taste | ||
Pepper to taste | ||
½ | cup | Whipping cream |
Cayenne pepper |
Directions
Preheat oven to 350'F.
Prepare rice according to package direction. Set aside. In a medium skillet saute onion and garlic in butter. Add almonds, pimientos, mushrooms, salt and pepper. Fold in cooked rice.
Fold mixture into an oiled 2-quart baking dish. Pour whipping cream over rice mixture. Bake at 350'F. for about 15 minutes, or until thoroughly heated. Sprinkle with cayenne pepper.
