Rice-no-roni (non-gluten)

Ingredients

2 | cans | (small) diced cooked chicken (or 1 and 1/2 cup diced cooked chicken) |
2½ | cup | Uncooked rice (I use uncle Ben's long grain) |
2 | tablespoons | Butter or margarine |
5½ | cup | Hot water |
1 | cup | Frozen peas |
1 | can | Sliced mushrooms (or 1 cup fresh) |
1 | can | Sliced water chestnuts - rinsed & drained |
1 | can | Cooked sliced carrots (optional) |
1 | Seasoning packet from a regular box of chicken Rice-a Roni* |
Directions
Saute rice in butter until it turns white. Add remaining ingredients, and stir. Bring to a boil. Cover tightly, and simmer for 20 min, or until done.
Makes 7 cups. Freezes well
