Richard's world on a plate - bean puree and avocado shell

Ingredients

½ Avocado
8 ounces Red kidney beans
1 bunch Chives
1 Garlic clove
1 Lime; juice of
60 millilitres Breadcrumbs

Directions

Preheat oven to 190C/Gas Mark 5.

1 Scoop out the flesh from the avocado and place in a blender with the other ingredients. Blend until combined.

2 Season, then spoon the mixture back into the avocado shell, top with the breadcrumbs and bake for 8-10 minutes.
