Roasted pepper, avocado and cheese english muff

Ingredients

Quantity Ingredient
4 Split English Muffins
8 Thin slices of red onion
1 large Avocado (ripe please)
8 slices Jack cheese
2 7-oz jars roasted bell --
Peppers; drained
¼ cup Parmesan cheese -- grated

Directions

Toast the muffins. Put muffins on baking sheet, and top each with a slice of onion. Peel and pit the avocado an cut into 8 wedges and add 2 slices to each muffin, one slice of jack cheese, and divide the red roasted peppers evenly. Add parmesan to the tops of each and broil about 3 minutes. This is a wonderful combination of flavors, and I also added crisp crumbled bacon the recipe didn't call for. SUPER!
