Roasted sweet potatoes with garlic and lime

2 mediums Sweet potatoes; peeled and cut into 1\" cubes
1 tablespoon Olive oil
½ teaspoon Salt
¼ teaspoon Black pepper
2 Cloves garlic; finely minced
4 Wedges fresh lime

Directions

Clarion Ledger Recipes, 11/19/97 Heat oven to 375*. Place sweet potato chunks onto a baking sheet and toss with olive oil. Sprinkle with salt, pepper and garlic and toss to coat.

Spread out in one layer on baking sheet. Roast 30-35 min, turning once with spatula, or until potatoes are cooked through and begin to brown. Just before serving, squeeze each serving with fresh lime juice. Makes 4 servings. NOTE: If you want to add some bite, add crushed red peppers.
