Rocket, courgette and parmesan sauce

Good handful of rocket
2 Courgettes
2 tablespoons Olive oil
Salt and black pepper

Directions

Roughly chop the cleaned rocket. Grate the courgettes coarsley. Heat the oil in a frying pan and toss the courgettes in the oil for 2 minutes, they should be a bright green colour and only just wilted. Season well with salt and pepper.

Toss the hot drained pasta with the courgette mixture, adding more oil if needed. Divide the mixture between 4 warm bowls and top each serving with a good covering of rocket and Parmesan. Serve at once.
