Roman-style chicken sausage

Ingredients

Quantity Ingredient
4 Feet small hog or sheep casings
4 pounds Chicken meat-15% fat
2 teaspoons Salt, or to taste
2 teaspoons Coarse grind black pepper
1 cup Finely chopped onion
½ cup Grated Romano cheese
½ cup Finely chopped green pepper

Directions

Prepare casings. Grind chicken through the coarse disk, mix with remaining ingredients and grind again. Stuff into casings and twist off into 4" links. To cook, saute in oil unti browned and cooked through.
