Rum-maple baked beans

3 | Slices bacon, cut into 1/2\" | |

1½ | cup | Finely chopped onion |
⅓ | cup | Maple syrup |
3 | tablespoons | Dark rum |
1 | tablespoon | Ketchup |
4 | teaspoons | Grainy mustard |
2 | 28-oz cans baked beans |
Directions
1. In a medium pan cook the bacon until crisp; remove from the pan.
2. Put the onion into the pan and cook until softened, about 5 minutes.
3. Add the maple syrup, rum, ketchup and mustard; cook 2 minutes.
4. Stir in the baked beans; cook 10 minutes, stirring occasionally.
5. Stir in the bacon and cook 2 minutes. Serve.
Note: S&W Brick Oven baked beans were used in this recipe with good results.
