Salade a la caraibe

Ingredients

Quantity Ingredient
1 cup White cabbage, shredded
1 cup Cucumber, grated
1 each Red bell pepper, sliced in circles
1 each Mango, peeled, stoned, slice
5 eaches Scallions, chopped
1 each Avocado, peeled & sliced
1 each Garlic clove, crushed
Juice of 2 lemons
5 tablespoons Olive oil
1 each Handful watercress
Salt & pepper

Directions

First, arrange the cabbage, cucumber, bell pepper, mango & scallions in a salad bowl. Now put in half the avocado slices. Then blend the garlic with the lime or lemon juice, olive oil & salt & pepper. Pour half the dressing over the vegetables & mango & toss.

Now arrabge the watercress & remaining avocado slices on top & drizzle the rest of the dressing over before serving.
