Directions
Place salmon in large skillet: add wine, wine vinegar, tarragon, minced parsley, peppercorns & onion. Simmer 15 minutes, uncovered part of the time, until fish flakes easily with a fork. Carefully lift out salmon & place on platter; garnish with lemon slices. Serve hot or cold, plain or with dairy sour cream spiked with minced fresh parsley.
