⅛ | teaspoon | Cumin |
⅛ | teaspoon | Salt |
1 | large | Green pepper; sliced |
1 | large | Yellow pepper; sliced |
4 | Flour tortillas; (8inch) | |
4 | Lettuce leaves |
Directions
Combine Yogo or cream cheese and green onion. In a large bowl, combine the coriander, lime juice, oil, cumin and salt. Add the peppers and toss to coat. Spread out 1 tortilla and top it with 2 tablespoons of the Yogo (or cream cheese) mixture, spreading the mixture almost to the edge of the tortilla. Top with 1 lettuce leaf, then onequarter of the pepper mixture.
Roll the tortilla up tightly and wrap it with plastic wrap. Repeat this procedure with the remaining tortillas and refrigerate until ready to serve. At serving time, cut the rollups in half diagonally, or let the kids peel the plastics wrap back and eat them like bananas.
