pounds Sweet and hot Italian sausages (total weight); pricked w/fork
4 Italian hoagie rolls; or crusty bread
5 tablespoons Olive oil
2 tablespoons Red wine vinegar
2 teaspoons Dijon mustard
1 large Garlic clove; crushed
1 tablespoon Fresh thyme leaves
¼ teaspoon Salt
teaspoon Freshly ground pepper
2 larges Leeks, 10-oz. total; white part only, cut into 2.1/2\" julienne, rinsed/drained
2 Yellow peppers; stemmed, rib removed, seeded/julienned
1 Tomato; diced
¼ teaspoon Salt
teaspoon Freshly ground pepper

SANDWICH FILLING

Grill or broil sausages 12 mins. or until cooked through; turning often. Make dressing - in blender or food processor, blend ingredients until smooth.

In lg. skillet, heat 1 tbsp. dressing over high heat. Add leeks and peppers; saute 5 mins. or until softened. Slice sausages diagonally; add to leek mixture. Add remaining dressing, the tomato, salt, and pepper. Toss. Serve in rolls.
